Another lovely blood glucose balancing meal. My favorite kind of meals & my recent fixation. As I mentioned in my Blood Glucose Balancing Breakfast post, I recently read the Glucose Goddess’s book Glucose Revolution: The Life-Changing Power of Balancing Your Blood Sugar. In this book, she talks about how important it is to create meals that support balancing your blood glucose and preventing drastic spikes & dips in your insulin and blood glucose.

Preventing these spikes & dips reduces food cravings, mood disturbances, and energy crashes. Since reading this book, it has become one of my missions to create my meals to be more blood-sugar balancing. I am now always considering how I can add fiber, protein, and fat to each of my meals to ensure it supports my mind & body.

Another mission of mine recently is to reduce the amount of processed foods I consume and focus on adding more whole foods into my diet. I have also tried to cut back on my soy intake to hopefully help with my digestion. While eating soy isn’t necessarily bad for you or your stomach, I have been experimenting with my diet to see what foods work best with my body. I do think overall bloating and stomach discomfort has gone down a good bit since cutting out the majority of tofu I eat. Fortunately, I don’t have issues with dairy, at least not any that I have noticed, so I have substituted most of my tofu with dairy for protein (hence the cottage cheese in this recipe).

This recipe includes all of the necessary requirements for a healthy, blood-glucose-balancing meal. It has fiber, protein, fat, and carbs, all eaten relatively in that order to further help with slowing the glucose spike from meals. I love this meal because it is easy to prep ahead of time, fast to put together day-of, and of course, it’s delicious & filling! Hopefully you enjoy this recipe, or at the very least, take some inspiration from it!
